Berries and chocolate are the flavour notes traditionally associated with natural processed Ethiopian coffees. As processing innovates and changes we are seeing more washed-like flavour profiles from naturals with tropical and stone fruit notes. For this new crop coffee think sweet southern peach tea with a hint of praline.
From the importers Crop to Cup: "Below the forest canopy of Rudo in Chelchele we entered the drying station of Shibru Dube, a smallholder who began producing coffee 5 years ago but didn't have market access. In 2023, he met a buyer who was interested in coffee—but on the way to meeting them in Yirgacheffe, got into a motorcycle accident, breaking both of his legs. With the interest of Crop to Cup as a buyer, Shibru began floating coffee and committed to producing specialty coffee. 'I was discouraged the last few years because cherry prices were so high and I had a minimized capacity to work. But you being here now, I have hope in my heart.' Shibru's son, Kefyalew, a civics teacher in Addis, helps in managing the family's coffee business."
